Who doesn’t love a hearty helping of Horseradish? The spicy root is a herbaceous perennial herb from southeastern Europe and western Asia, well known for its spicy kick and sinus clearing characteristics. Horseradish is a member of the Brassicaceae family, related to arugula and cabbage, and grows upright stalks of large leaves paired with white flower clusters shooting from thick, white roots. Easy to grow, it quickly sprouts plenty of greens in full sun, growing as either an annual or perennial, depending on region.
Historically, Horseradish has been revered since (at least) ancient Greece, where it found its way into mythology as being “worth its weight in gold” as an aphrodisiac. Its signature flavor is created by sinigrin and gluconasturtiin, Horseradish’s 2 glucosinolates that bring about a pungent flavor. Nutritionally, the horseradish contains vitamin C, potassium, magnesium, phosphorus and calcium, so it carries quite a mouthful of benefits.
Try the greens in salads, grate the root in vinegar, or even make it into a wasabi-substitute for your garden grown veggie sushi!
